The above was my first attempt at creating a sweet potato stew. It was lacking tomato flavor, spices and herbs in my opinion. My second attempt at this recipe turned out much better but part of this journey is trial and error so I wanted to share both recipes. You can see all the ingredients in the first attempt. The second recipe will include a list.
A note about the vine tomatoes: I pureed the vine tomatoes in an attempt to thicken up the stew a bit.
Fresh ingredients:
- Vine tomatoes
- Roma tomatoes
- Red bell pepper
- Sweet onion
- Garlic
- Cilantro
- Celery
- Sweet potatoes
- Green onion
- Freshly squeezed lime juice
Canned goods (no salt added) are as follows:
- Sweet corn
- Black beans
- Kidney beans
- Tomato sauce
The seasonings include:
- Chili Powder
- Cumin
- Paprika
- Turmeric
- Garlic powder
- Black pepper
- Cayenne red pepper
I heated all the ingredients (minus cilantro and lime juice) and seasonings together for about 3 hours on high heat and then another hour or so on low heat. Cook until the sweet potatoes are soft.
Top stew with cilantro and lime juice. Like always this is a template, add or take away ingredients as you see fit. It is an easy dish and may accommodate a large amount of guests. Most of all throw on some music and enjoy your time in the kitchen or with friends preparing the stew knowing it will be worth the work later on.
