I hope you are well! We have a lot of ingredients at play here but please take away undesired items and add some of your favorites. 🙂
We begin with any type of lettuce that can hold a decent amount of food. We will cook:
- Jasmine Rice (add spinach into rice once it is almost finished cooking)
The rice will be cooked with the spinach in a separate pot. The following ingredients will be cooked together:
- Lima Beans
- Black Beans – no salt added
- Kidney Beans – no salt added
- Sweet Corn – no salt added
- Onion
- Green Onion
- Green Bell Pepper
- Chili Powder
- Ginger
Once cooked thoroughly (beans will begin to split and become soft), slice the mushrooms, add peanuts (you can also cook the peanuts) and tomatoes and squeeze some lime juice on top of the mixture. Place on top of a leaf of lettuce. Add some orange, strawberry and mint water.
Once again this is a template, add some of your own herbs and spices to taste. You may want to add garlic or a sauce I haven’t thought of so play with your favorites and have fun!
