Fruits and vegetables can be harvested in a timely manner to optimize freshness and nutritional value. Blanching usually follows the harvest. Blanching is when foods are placed in boiling water for a short period of time, which varies with each plant, and then dunked into ice water. Blanching is meant to preserve flavor, color, and texture. The pros to selecting frozen fruits and veggies include longevity of the product, inexpensiveness, and ease of cooking.
