Eating a whole food plant-based meal can be expensive, however, it does not have to be. Let’s explore one option by researching an example recipe.

  • Sweet potato
    • Cost as of 9.2022 is around $1-$1.50 per pound
    • 1 cup (mashed)
    • Consider boiling
  • Black beans
    • One can is around $1
    • 1 cup
    • Cook until tender
  • Spinach
    • 12oz frozen bag is around $1.00
    • 1 cup
    • Cook as desired or go for fresh spinach
  • Jasmine rice
    • 5lb bag of Jasmine rice is around $7.00
    • 1 cup
    • 1 part rice 2 parts water
  • Fresh salsa
    • This can vary, but 16oz (1 pound) of fresh salsa is around $3-$4
    • 1 cup

This recipe would cost a little under $6.00.
