Simple & Vibrant

Hi all, hope you are well!  Let us put a bit of color in our salad today!  We begin by gathering our ingredients.  I prefer to start with:

  • Watermelon
  • Blueberries
  • Strawberries
  • Blackberries
  • Apples
  • Oranges
  • Cucumber
  • Carrots
  • Green Onions
  • Onion
  • Baby Spinach
  • Mint (this will be added to our water)

Make sure you get a huge bowl out as we want to be able to mix all our ingredients..  This recipe is simple and flexible (omit or add anything you would like).  If you do not have time you can always get fruit and vegetables are prepared at the grocery but that usually drives up the price.  Cut up the watermelon, cucumber, apples, carrots, green onions and onion.  Toss in the berries and baby spinach.  Lastly cut the orange in half and squeeze the fresh orange juice on top, mix and serve!

On to our water!  Slice a sliver of cucumber and toss in some mint leaves as well.  This combination adds a clean and refreshing drink to an already vibrant salad.  This salad is sweet with a little bit of a kick from the onions.

Once again this is merely a template, consider: add-ins or substitutes, crushed peanuts, sliced almonds, pumpkin seeds, sunflower seeds, chia seeds, pecans, walnuts, basil, lemon juice, zucchini, squash, grapefruit juice or anything else your creative self can come up with!!
