Rice and Beans

Jasmine Rice: 1/2 cup add 1 cup of water, cook until rice softens (approx 10 minutes on medium heat)

Refried beans (without lard or added oil), kidney beans without salt added, sweet peppers, green onions, cilantro, freshly squeezed lime juice, garlic powder and ground cumin. Cook until kidney beans soften.

Additional ideas: throw in fresh salsa which may include tomatoes, garlic, lime juice, cilantro, onion, corn, beans, jalapeno or other peppers and any other ingredient to taste. Avocado is another great addition to this dish!
